Forté Recipes: Crepes

Crepes with strawberries

Crepes have always been one of my top novelty breakfast items, and they make an excellent snack as well! The best part is everyone can make them just how they want them.

Crepes:

½ cup cold water

½ cup cold milk

4 eggs

¼ tsp. salt

2 tsp. sugar

1 cup flour

2 tbsp. butter, melted

Toppings:

½ cup any berries

2 tbsp. whipped cream

Directions: Blend together water, milk, eggs, salt, and sugar. Add flour and melted butter and continue to blend for 1 minute. Cook using a crepe maker according to directions. Fill with berries and whipped cream, and roll up.

Eggs

The base of any crepe is eggs. I recommend buying DHA enriched eggs if you can afford them, especially if you are pregnant or breastfeeding. DHA is an essential omega-3 fatty acid that is often deficient in our diets. DHA is especially important during pregnancy, lactation, and throughout childhood as it is essential for brain growth and development. It is important for adults too and research shows a positive correlation with many diseases including depression, Type 2 diabetes, heart disease, high blood pressure, arthritis, eye diseases, and cancer.

Eggs are also a great source of choline. Choline is a water-soluble vitamin that is also deficient in most of our diets. Like DHA, choline is critical during pregnancy as low choline intake is linked to neural tube defects and poor memory development in the baby. Choline is also important for heart health, is anti-inflammatory and may help prevent breast cancer. Besides choline and DHA, eggs are also a great source of protein, vitamin B12, riboflavin, and lutein.

Berries

My favorite filling for crepes are berries and whipped cream! Berries are some of our most nutritious fruits. Berries are even more important during pregnancy because they are packed with vitamin C, potassium, folate, and fiber, as well as countless antioxidants. Berries are so nutritious that I recommend eating a ½ cup of berries every day; frozen berries count too! In fact, many frozen berries are equally as nutritious as their fresh varieties as they are picked at their peak ripeness and flash frozen so their nutrients are well preserved.

Some of my other favorite fillings include peanut butter, granola and honey, Nutella and bananas, peaches and vanilla yogurt, sliced apples, ricotta cheese with a sprinkle of cinnamon, as well as savory crepes with ham, eggs, and cheese.
