If you are looking for a healthy dessert option, this is one of my favorites! We especially love this dessert in the summer, as it is easy to throw on the grill after your done cooking the meat. Peaches are always refreshing and a little bit of ice cream with fruit is always a good combo.
Grilled Peaches & Ice Cream
1 peach
1 tsp. butter
Sprinkle of cinnamon
¼ cup ice cream
Directions: Preheat oven to 400F. Slice peach in half. Place on baking sheet. Top with butter, and sprinkle with cinnamon. Bake for 20 minutes. Top with vanilla ice cream.
Peaches
The best peaches are the ones that are locally grown and harvested when ripe so if you have access to a peach tree or can buy them at a farmer’s market that is your best bet. Unlike most other fruits and vegetables, the white-fleshed peaches are actually more nutritious than yellow-fleshed peaches. In this case, the lighter the color the better. The white-fleshed peach has also twice the antioxidant activity of the darker-fleshed peach. Peaches are a good source of vitamins C and A, as well as lutein and zeaxanthin, which are essential for proper fetal eye development. They are also a relatively good source of iron and potassium.
Ice Cream
While the peaches are still hot, I put a couple tablespoons of vanilla ice cream in each peach half. The ice cream starts melting into the peach, making it absolutely mouth watering. Ice cream has plenty of fat and sugar, but it also has some redeeming qualities as well. Just like other dairy products it is a great source of protein, calcium, and phosphorus. As I have said before, calcium is absolutely essential during pregnancy. You need 1000mg each day while pregnant. Neglecting calcium intake can lead to preeclampsia which can cause pre-term birth.
Besides, everyone needs a treat every now and then. Just as long as you don’t overdo it!
